Apple and Banana Bread
This gluten free apple bread has all of those fall flavors we all love! Apple Pie Spices combined with chunks of apple in a bread that can be eaten as a dessert or even for breakfast! It is kid approved as my granddaughter told me she loved it for breakfast! What other endorsement do you need?!!

Equipment
- Large Mixing bowl
- Medium Mixing Bowl
- 9 x 5 Loaf Pan (If not using a silicone pan, you'll need parchment paper too)
Ingredients
Dry Ingredients
- 1 ½ C Oat Flour
- ¼ C Flax Seed, ground
- 1 tsp Baking Soda
- ½ tsp Baking Powder
- 2 tsp Apple Pie Spice (Adjust to taste, can sub cinnamon)
Wet Ingredients
- 3 Med Bananas, ripe and mashed
- ½ C Applesauce, unsweetened
- ½ C Maple Syrup
- 1 ½ tsp Vanilla
- 2 Med Apples, cored, peeled and diced
Optional Add Ins
- ½ C Chocolate Chips, dairy free
- ½ C Nuts, chopped, any kind you like!
Instructions
- Preheat oven to 350 °F
Dry Ingredients Instructions
- Add all of the dry ingredients to the large mixing bowl. Whisk and combine well.
Wet Ingredient Instructions
- Add the ripened, peeled bananas to the medium mixing bowl. Mash them with a fork or potato masher. The bananas can still be chunky in this recipe!
- Add the remaining wet ingredients (except for the diced apples) to the bananas and mix well to combine.
Batter Instructions
- Add the wet ingredients to the mixing bowl with the dry ingredients in it.
- Mix well to combine.
- Add the diced apples to the batter mixture and fold in gently until well combined.
- Pour the batter into the prepared loaf pan. Smooth out the batter.
- If you like, you can decorate the bread with an apple design at this point and sprinkle the design with apple pie spice or cinnamon.
- Bake the loaf for 45-50 minutes or until a toothpick inserted into the middle of the bread comes out clean.
- Allow the bread to cool in the pan for about 15 minutes.
- After the bread has cooled somewhat, you can remove it from the pan and continue cooling it on a wire rack.
Notes
***Store Apple Banana Bread in plastic wrap or an airtight container on the counter for a few days (if it lasts that long!)
***This Apple Banana Bread can also be frozen! Cool completely(i recommend overnight in the refrigerator) and wrap in plastic wrap and then put it inside a self sealing plastic bag. Store in the freezer for up to months.
