Arugula, Chickpea and Olive Salad

The peppery flavor of the arugula is balanced by the mild flavors of the chickpeas. A splash of frsh lemon or lime juice makes a great dressing!

  • 1 Large Serving Bowl


  • 1 -5 oz pkg Arugula
  • 1 -15 oz can Chickpeas, rinsed and drained
  • 20 whole Kalamata Olives
  • 1 pkg Grape Tomatoes, whole or cut in halves
  • 1 Med Avocado, peeled and diced

Dressing Options

  • 2 TBSP Lemon Juice, fresh squeezed
  • 2 TBSP Lime Juice, fresh squeezed
  • 1-2 TBSP Hemp Seeds
  • 2 TBSP Fresh Dill as topping or mixed into salad

This salad comes together quickly and easily! Minimal prep for a healthy and delicious main dish or side salad! Yum!
