Asian Noodle Salad

This recipe takes less than 30 minutes to prepare, and you can further decrease the prep time if you purchase pre-cut vegetables. Great for those nights that you're short on time but would love to have a dish with Asian flavors!

Equipment

  • Medium Sauce Pan
  • Large Salad Bowl
  • Small Glass Measuring Cup

Ingredients

Salad Ingredients

  • 1 pkg Mai Fun Rice Sticks (Make according to package instructions.)
  • 3 Med Carrots, shredded
  • ¼ Head Red Cabbage, shredded (about 2 C)
  • 3 Small Cucumbers, diced (about 1 C)
  • 1 Small Romaine Lettuce Head, thinly sliced
  • 3-4 Scallions, thinly sliced
  • ¼ C Thai Basil, chopped (Can use regular basil instead)
  • ¼ C Cliantro, chopped
  • ¼ C Peanuts, chopped (optional for nut free)

Dressing Ingredients

  • 3 TBSP Water TBSP
  • 5 TBSP Maple Syrup (Can reduce if too sweet)
  • 2 ½ TBSP Fish Sauce, vegan
  • 2 TBSP Lime Juice, fresh squeezed
  • 2 Garlic cloves, minced

Optional Toppings

  • 1 Small Chili pepper, chopped
  • 2 tsp Lime Zest

Instructions

  • Follow the package cooking instructions for the rice noodles. When the noodles are finished cooking rinse well with cold water and allow to drain.
  • While the noodles are cooking, prep all of the vegetables as instructed in the ingredient list.
  • Place the rinsed and drained rice noodles in the bottom of the large salad bowl. Add the vegetables( do not add peanuts at this point) to the noodles. Set aside.
  • In a small measuring cup, add all of the dressing ingredients and whisk to combine. Pour over the noodles and vegetables. Using a tongs, mix the salad well.
  • Sprinkle the peanuts on the top of the salad and serve! Enjoy!
