Banana and Zucchini Breakfast Cookies

These cookies are moist and delicious and packed with plant powered goodness! The kids will love them because of course, who doesn't love a bit of chocolate for breakfast? This recipe can be made nut free and gluten free if needed.

Equipment

  • Medium Mixing Bowl
  • Large Baking Sheet
  • Silicone Baking Sheet or Parchment Paper

Ingredients

  • 3 med Bananas, over ripe
  • C Peanut Butter (Use sunflower seed butter for nut free)
  • 2 tsp Vanilla Extract
  • 2 C Oats (Use GF oats if needed)
  • C Zucchini, shredded and squeezed dry
  • 2 TBSP Chia Seeds
  • 2 tsp Cinnamon
  • ½ tsp Baking Powder
  • C Chocolate Chips

Optional Ingredients

  • C Nuts, chopped
  • C Raisins or Craisins

Instructions

  • Preheat oven to 350 °F
  • Add 3 over ripe bananas to a medium mixing bowl. Mash with a fork.
  • Add peanut butter and vanilla. Mix together well.
  • Add the oats, chia seeds and cinnamon to the banana mixture. Mix well.
  • Add the zucchini and chocolate chips. (and any other ingredients you wish to add) and fold to incorporate.
  • Using an ice cream scoop, place 12 scoops on the baking sheet. After all of the dough is scooped, use your fingers to flatten and shape the cookies.
  • Bake for about 12 minutes.
  • Remove the pan from the oven and allow the cookies to cool on the sheet pan to allow them to set.
  • Store refrigerated in an airtight container for 3-4 days.
