Butternut and Black Bean Soup

This is a hearty comforting soup that incorporates superfoods! Beans and greens! Black beans, collard greens and the added benefit of additional fiber and nutrients from the butternut squash. Don't skip the all spice! This little spice gives this soup the added bump to push that flavor profile over the top!

Equipment

  • Large Stockpot

Ingredients

  • 2 Med Onions, diced
  • 1 Med Red Bell Pepper, diced
  • 6 cloves Garlic, minced
  • 6 Green Onions, thinly sliced
  • 4 C Butternut Squash, peeled and cubed
  • 2 -15 oz cans Black Beans, drained and rinsed
  • 1 tsp Italian Seasoning
  • 4 Sprigs Thyme (or 1 tsp dried Thyme)
  • 1 can Coconut milk
  • 2 ½ C Vegetable Broth (can substitute water)
  • 2 C Greens, chopped (collard, spinach or kale)
  • 1/4-1/2 tsp All Spice

Serving Suggestions

  • Brown Rice (Microwave Brown Rice is a great time saver!)
  • Avocado, diced

Instructions

  • Heat the stock pot over medium high heat. When the pan is heated, add the onions and bell peppers. Sautee until the vegetables are softened, using water or broth as needed to prevent sticking and burning. This should take 3-5 minutes.
  • Add the garlic and green onions and continue to sautee for about 1 minute. Move the vegetables around occasionally to prevent burning.
  • Add the butternut squash, Italian Seasoning and thyme. Stir to combine. Add the coconut milk, vegetable broth and all spice. Bring the soup to a boil and reduce heat to simmer for 15 minutes. Stir in leafy greens. Cover the pot and cook for about 5 minutes. Remove the lid and add the black beans. Allow the soup to simmer for about 5 minutes.
  • Serve and Enjoy!
