Cashew “Cheeze” Sauce

This creamy sauce is made with cashews! Their mild flavor is fantastic when paired with garlic, lemon and nutritional yeast! Is it really a "cheese" sauce? No. Does it taste delicious? YES! Quick and easy!

Equipment

  • 1 High Speed Blender

Ingredients

  • 1 ½ C Cashews, soaked and drained (see notes)
  • 2 ½ TBSP Lemon Juice, fresh squeezed
  • 3/4-1 C Water
  • ¼ C Nutritional Yeast
  • ½ tsp Chili Powder
  • 1/2-1 tsp Garlic, granulated (can sub 1 clove fresh)
  • 1/4-1/2 tsp Turmeric
  • ½ tsp Dijon Mustard
  • ¼ tsp Black Pepper

Instructions

  • Soak cashews in 2 C of hot water for about 20 minutes. Drain and rinse cashews. Add the cashews to your blender.
  • Add the remaining ingredients to the high speed blender and process on high for about 2 minutes.
  • Check the sauce. If the sauce seems too thick, you can add a few tablespoons of water or broth and process again. Continue until the desired consistency is reached.
  • Please note that this sauce continues to thicken as it sits so you may need to add more water or broth as you use it.

Notes

***For ease of preparation, soak your cashews overnight in the fridge or for a quick method, add the nuts and 2 C of water to a small saucepan and boil for 15 minutes. Drain and rinse.
***This sauce will continue to thicken as it sits. You will need to add water or broth to the sauce as you use it to thin it our. This will not affect the taste of the sauce at all! 
**This sauce is great for “mac & cheese” or as a topping for baked potatoes as is. Add green chilis and tomatoes to make it a more Tex Mex sauce and use on nachos, tacos or in quesadillas.
