Cheezy Chickpea Sauce

This quick and easy sauce (ready in 10 minutes!) is a great way to help your family increase their intake of legumes! It is a "cheezy" sauce that can be used on anything from noodles to baked potatoes to nachos! You and your family will love it!

Equipment

  • 1 High Speed Blender
  • 1 Medium Saucepan

Ingredients

  • 1 -15 oz can Chickpeas, reserve the liquid
  • 1/4-3/4 cup Vegetable broth (used to adjust for desired sauce thickness)
  • ½ cup Nutritional Yeast
  • 1 large Lemon- juiced
  • 2 TBSP White Miso Paste (to make this soy free, use chickpea miso paste)
  • 1/2-1 tsp Garlic, granulated
  • 1/2-1 tsp Onion, granulated
  • ½ tsp Turmeric

Instructions

  • Place all of the ingredients (except the reserved chickpea liquid-aquafaba) to the high speed blender. Process on high until the sauce is smooth and creamy.
  • Add small amounts of the reserved aquafaba to the sauce to thin as needed.
  • Taste and adjust the seasonings to desired flavor profile.
  • Pour the sauce into the medium saucepan.
  • Cook over medium heat for about 3-5 minutes to allow the flavors to combine.
  • If needed, add more aquafaba to thin the sauce as it cooks.
  • Serve and enjoy!
