Chickpea Caesar Salad

This is a light refreshing summer salad with the flavors of a traditional Caesar salad!

Equipment

  • 1 Large Mixing bowl
  • 1 Baking Sheet
  • 1 Piece of Parchment Paper
  • 3 Small Mixing Bowls

Ingredients

  • 3 Medium Romaine Lettuce Heads, ripped in bite size pieces (see notes)

Ranch Roasted Chickpeas

  • 1 -14.5 oz can Chickpeas, rinsed and drained (see notes)
  • 1 TBSP Dill, dried
  • 1 TBSP Parsley, dried
  • 1 TBSP Garlic, granulated or powder
  • 2 tsp Onion, granulated or powder
  • ½ tsp Black Pepper, ground

Tahini Caesar Dressing

  • ¼ C Tahini, drippy
  • 2-3 TBSP Lemon Juice, fresh squeezed
  • 2 tsp Caper Brine
  • 1 tsp Capers, finely chopped
  • 1 tsp Dijon Mustard
  • 1-2 Cloves Garlic, minced
  • ¼ tsp Black Pepper

Optional Toppings

  • 2 TBSP Hemp Parmesan
  • 1 Medium Avocado, diced
  • 1 C Asparagus, fresh steamed and cooled

Instructions

Roasted Chickpea Instructions

  • Preheat oven to 425 degrees. Line a baking sheet with parchment paper.
  • Rinse and drain chickpeas. Put them in a small bowl.
  • In a separate small mixing bowl, add the ranch seasoning ingredients (dill, parsley, garlic, onion and black pepper). Mix to combine.
  • Measure 2 TBSP of the Ranch Seasoning and add to the chickpeas. Mix well. (the seasoning will stick better if the chickpeas are a bit damp). Put the remaining ranch seasoning in an airtight container for future use.
  • Spread the chickpeas on the parchment lined baking pan and put on the middle oven rack. Roast for 20-30 minutes, being sure to move the chickpeas around halfway through the roasting time.
  • When the chickpeas are finished roasting, remove the baking tray from the oven and cool the chickpeas.

Tahini Caesar Dressing Instructions

  • In a small bowl, add all of the Tahini Caesar Dressing ingredients. Whisk to combine. Set aside.

Salad Assembly Instructions

  • Wash, rinse and pat dry lettuce. Rip into bite size pieces and place in a large serving bowl.
  • Top with roasted chickpeas and any optional toppings you like. Serve with Tahini Caesar Dressing on the side or drizzle the dressing over the salad and serve immediately.

Notes

The dry ranch dressing mix will make more than you need for this recipe. Place the remaining dressing mix in an airtight container for use in future dressings or dips.
Ripping your lettuce rather than cutting it with a stainless knife will prevent the lettuce from browning quickly.

This salad has great Caesar salad flavors without the fish! It’s a great light and refreshing summer salad!
