Chickpea Flour Pancakes

Beans for breakfast!? You bet! Chickpea or Garbanzo flour is simply ground chickpeas into a flour consistency! This is a great flour to use in some recipes if you want to increase your legume intake! The pancakes do not taste like beans! They are slightly sweet with the addition of coconut sugar! No one will ever know that you used chickpea flour!

Equipment

  • 1 Medium Mixing Bowl
  • 1 Large Saute Pan

Ingredients

  • 1 C Chickpea Flour
  • 3/4-1 C Plant Based Milk (use nut free milk or soy free milk if needed)
  • 2 ½ tsp Baking Powder
  • 3 TBSP Coconut or Date Sugar
  • 1 ½ tsp Vanilla
  • 1 tsp Cinnamon

Instructions

  • Add the chickpea flour, baking powder and sugar to a medium mixing bowl. Whisk to combine. Whisk until there are no lumps.
  • Whisk the almond milk into the dry flour mixture until the batter is smooth. The chickpea flour makes lumps easily, so whisk vigorously to avoid as many lumps as possible.
  • Heat your non-stick pan over medium heat. Add 1/4 cup of batter to the pan for each pancake. Cook 2-3 minutes on the first side. the edges should be set and there should be bubbles in the middle.
  • Using a spatula, slide it under the pancake and flip it. Cook for 1-2 minutes on the second side until the pancake is set.
  • Continue until all of the batter has been cooked. Serve immediately! Enjoy!
