Chocolate Tofu Mousse

Tofu? In dessert? with chocolate? YES! YES! YES! So silky, creamy and smooth! The blandness of the tofu is great because you really taste the cocoa!

Equipment

  • 1 High Speed Blender

Ingredients

  • 1 pkg Silken Tofu
  • 1 pkg Tofu, firm or extra firm (drained for 15 min)
  • ½ C Cocoa Powder
  • ½ C Maple Syrup
  • 2 TBSP Peanut butter or Peanut Butter Powder (can omit to make it nut free)
  • 2 tsp Vanilla

Suggested Toppings

  • 1 C Ccoonut Whipped Cream
  • 1 C Fresh Fruit
  • 2 TBSP Chocolate, shaved

Instructions

  • Drain the excess water from the tofu packages and press the firm/extra firm tofu for 15 minutes.
  • After the tofu is drained, add all of it to the blender. Add all of the remaining ingredients to the blender as well.
  • Process on high for 1-2 minutes, pause occasionally to scrape down the sides.
  • Blend until the mixture reaches a silky smooth consistency.
  • Pour the mixture into individual dessert dishes or one large bowl.
  • You can serve immediately or if you would like it to set up a bit, you can refrigerate it for about an hour before serving. Enjoy!
