Crockpot Black Eyed Peas

This is a great crockpot recipe that has the smoky flavor reminiscent of traditional black eyed pea recipes. Eat this dish on New Year's Day as it has long been eaten to provide good luck in the new year!

Equipment

  • Slow Cooker or Crock Pot (6-8 QT)

Ingredients

  • 1 -1 lb bag Black Eyed Peas, rinsed and drained
  • 4 C Vegetable Broth, salt free (Can substitute water)
  • 1 med Onion, diced
  • 2 med Carrots, peeled and cut into coins
  • 3 cloves Garlic, minced
  • 1 Bay Leaf
  • 1/2-1 tsp Sage, dried
  • ½ tsp Black Pepper
  • ½ tsp Paprika
  • 1/8-1/4 tsp Thyme, dried
  • 1/8-1/4 tsp Liquid Smoke
  • 2 C Collard Greens, chopped

Optional Add In

  • 1 tsp Hot Sauce (or more to taste!)

Instructions

  • Rinse and drain black eyed peas. Add the black eyed peas to the slow cooker.
  • Add all remaining ingredients except the collard greens. Cover and set on low to cook for 8 hours.
  • At about the 6 hour mark, add the collard greens. Continue cooking until the black eyed peas are tender.
  • Adjust seasonings to taste as the dish is cooking.

Notes

***Leftovers can be frozen. Cool completely and put leftovers in a freezer safe container. Use within 2 months.
