Double Chocolate Mug Cake

Equipment

  • 1 Wide Mouth Microwave Safe Coffee Mug

Ingredients

  • 2 TBSP Oat Flour (heaping)
  • 2 TBSP Cocoa
  • ¼ tsp Baking Powder
  • 2 TBSP Maple Syrup
  • 1 TBSP Applesauce
  • 2 ½ TBSP Plant Milk
  • 1 tsp Vanilla

Optional Add Ins

  • 1 TBSP Chocolate Chips, non-dairy (I like Enjoy Life)
  • 1 TBSP Walnuts, chopped (reserve a few for the topping)

Instructions

  • Add the dry ingredients to the coffee mug. Whisk to combine well.
  • Add the remaining wet ingredients, nuts and chocolate chips to the mug. Mix well to combine.
  • Stir in the chocolate chips and nuts.
  • Microwave on high for 1 minute. If it still looks "wet" return it to the microwave and heat for an additional 30 seconds.
  • Sprinkle the remaining nuts on top. Serve warm or cooled. Coconut whipped cream and a drizzle of chocolate would add a bit of flair to this dessert!
