Five Seed Crackers

This is an easy recipe to make gluten free, oil free, salt free and nut free crackers to serve with soups, as salad croutons or on a charcuterie board. So good, so good for you!

Equipment

  • Medium Mixing Bowl
  • Large Baking Sheet
  • Parchment paper or Silicone Baking Mat
  • Rolling Pin

Ingredients

  • ¼ C Chia Seeds
  • ¼ C Sesame Seeds
  • ½ C Pumpkin Seeds
  • ½ C Sunflower Seeds
  • 1-2 TBSP Flax Seed, ground
  • 3/4-1 C Water (or vegetable broth)
  • 1 tsp Rosemary
  • 1 tsp Garlic Powder
  • 1 tsp Minced Onion
  • ¼ tsp Black Pepper

Instructions

  • Preheat oven to 350 °F
  • Place all ingredients in the mixing bowl. Stir to combine well.
  • Allow the mixture to sit for 15 minutes. This allows the chia seeds to absorb the liquid to help bind the ingredients together.
  • Place one piece of parchment paper on a hard surface. Turn out the cracker mixture on the parchment paper. Using your hands, spread the mixture out a bit.
  • Place another piece of parchment paper over the mixture and start rolling the mixture out. Roll the mixture out into a rectangle. Your crackers should be about 1/8-14" thick. You may find that the mixture sticks to the paper, this is because there is no oil in the recipe. Just work carefully with the mixture.
  • Slide the parchment paper onto your baking sheet. Carefully peel off the top layer of parchment paper.
  • Place the baking sheet in the oven on the upper rack. Bake for about 20 minutes.
  • Remove the pan from the oven. Using a knife or a pizza cutter, cut the crackers in desired size.
  • Return the baking sheet to the oven and bake for an additional 15 minutes. If the crackers aren't quite dry yet, allow them to continue baking, checking them every 5 minutes until dry enough.
  • Remove the pan from the oven and allow the crackers to cool completely.
  • Break the crackers apart. Store in an airtight container for up to one week.
