Four Bean Salad

This delicious salad comes together quickly and you really need to just open four cans of beans and slice red onion! The dressing is sweet sour and oil free! So refreshing and nutricious!

  • 1 Can Opener
  • 1 Large Serving Bowl
  • 1 One Cup Measuring Cup


Salad Ingredients

  • 1 Can Green Beans, rinsed and drained
  • 1 Can Yellow Wax Beans, rinsed and drained
  • 1 Can Chickpeas, rinsed and drained
  • 1 Can Red Kidney Beans, rinsed and drained
  • ½ Med Red Onion, thinly sliced

Dressing Ingredients

  • C Apple Cider Vinegar
  • 2-3 TBSP Maple Syrup
  • ¼ tsp Black Pepper


Dressing Instructions

  • To a one cup measuring cup, add the apple cider vinegar, maple syrup and black pepper. Whisk to combine.

Salad Assembly

  • Add all of the rinsed and drained beans (Green, yellow, chickpeas and kidney beans) and the sliced onions to a large serving bowl.
  • Pour the dressing over the salad and gently mix to combine.
  • Taste and adjust seasonings to taste.
  • Refrigerate. Occasionally mix the salad to assure all the dressing coats the beans.
  • Serve and enjoy!

This salad is simple to make, just open a few cans of beans! Total time for this salad is 15 minutes and you can use mostly pantry items. Definitely a favorite of our family!
