Green Pea Pesto

In just 5 minutes you can have a delicious dip, topping or pasta sauce ready for your enjoyment! Using fresh peas really takes this recipe flavor profile up a notch!

Equipment

  • High Speed Blender

Ingredients

  • 1 Cup Green Peas, fresh or frozen (see notes for fresh peas)
  • 2 Large Basil stalks, use only the leaves
  • ¼ Cup Nutritional Yeast
  • 2 cloves Garlic, fresh
  • ½ Medium Lemon, fresh squeezed juice
  • ¼ Cup Pine Nuts, toasted (optional)
  • 3-5 TBSP Water or Vegetable Broth

Instructions

Fresh Peas

  • If using fresh peas, you can use them raw or microwave them for about 2 minutes and cool prior to using in this dip

Frozen Peas

  • Thaw peas and drain prior to use in this recipe.

Green Pea Pesto Instructions

  • Add all of the ingredients to a high speed blender or food processor. Process on high until all the ingredients are well combined.
  • Taste and adjust seasonings as needed.
  • Store in an airtight container in the refrigerator for up to 1 week.

Notes

***This recipe is great as
     -a dip with fresh vegetables or a sliced baguette
     -a Sandwich or wrap spread
     -a pasta sauce, just pour over cooked pasta, heat and serve
     -a salad or potato topper
