Hoagie Dip (Plant Based)

This plant based hoagie dip has all of the flavors of an original Italian Hoagie Dip without all of the fat! This is a great make ahead dip as the flavors meld really well with time, so make it the day before you plan to serve it! It is also a great "salad" to use as a topper on a mixed greens salad!

Ingredients

Salad Ingredients

  • 3 Cups Lettuce (Iceberg is traditional, but you can use what you have!)
  • ½ Cup Grape Tomatoes, halved
  • Cup Red Onion, finely diced
  • ½ Cup Green Bell Pepper, finely diced
  • ½ Cup Red Bell Pepper, finely diced
  • ½ Cup Cucumber, seedless, finely diced
  • ¼ Cup Dill Pickles, finely diced (I rinse and dry my pickles before using to reduce the amount of salt)
  • Cup Pepperoncini, finely diced (Rinse and drain)
  • ½ Cup Black Olives, thinly sliced
  • 1 TBSP Oregano (or more to taste)

Instructions

  • Add all of the chopped/diced vegetables and relishes to the bowl.
  • Sprinkle the Oregano on top of the vegetables and relishes.
  • Mix well. Adjust seasonings to taste.
  • If you like, use a bit of brine from the pickles, pepperoncinis and or pickles to the salad to moisten. Allow the mixture to stand for at least a few hours for the flavors to meld.
  • Serve with small bread pieces of your choice, lettuce leaves or vegetables for dipping!

Notes

***There is a really good pepperoncini dressing recipe on line by Monkey and Me Kitchen Adventures that is great on this salad. I make it using beans as I don’t like the amount of fat that cashews add to the salad.
