Jackfruit BBQ Sandwiches

You can have a sandwich made in about 15 minutes! Really! Using canned jackfruit and a quick 5 minute BBQ sauce, it can be ready in a really short time frame! Delicious, nutritious and fast!

Equipment

  • 1 Mixing Bowl
  • 1 Small Sautee Pan

Ingredients

  • 1 -15 oz can Jackfruit, rinsed, drained and pulled apart

BBQ Sauce

  • ½ C Ketchup (I use low salt and no sugar ketchup)
  • 1 TBSP Maple Syrup (or more to taste)
  • ½ TBSP Distilled White Vinegar
  • ½ TBSP Molasses
  • ½ TBSP Worcestershire Sauce (vegan)
  • ½ TBSP GF Tamari Sauce
  • 1 tsp Smoked Paprika
  • ½ tsp Liquid Smoke
  • ½ tsp Yellow Mustard

Serving Suggestions

  • 2 Whole grain rolls
  • 2 Med Sweet Potatoes, baked
  • 2-4 Lettuce leaves
  • 2-4 Wraps

Instructions

  • Rinse and drain Jackfruit. Shred the Jackfruit into a bowl. Shred.
  • In another medium mixing bowl, combine all of the sauce ingredients and whisk until thoroughly combined.
  • Add 1/2 of the BBQ sauce to the Jackfruit and mix well. Add more if needed and reserve about 1-2 TBSP of sauce for serving.
  • Once the sauce is mixed with the Jackfruit, add it to a small sautee pan over medium high heat. Heat through, about 5 minutes. Mix occasionally. It is ok to have the sauce brown a bit. The sugar is caramelizing and that adds depth of flavor!
  • When heated through, place some Jackfruit on a bun and drizzle with remaining sauce. Enjoy!

Notes

***Serving suggestions:
Top with tangy coleslaw (recipe is in the e-cookbook file under salads.)
Top with pickled Red Onion slices and pickled jalapenos for a spicy kick!
Serve in a lettuce wrap or a tortilla with suggested toppings!
