Jambalaya (Plant Based)

Only 40 minutes to delicious! Great batch cooking entree as the flavors become more enhanced with time! This recipe uses one pan and is a hearty delicious take on the traditional Jambalaya! A great way to incorporate more beans into your meal! Comfort food with southern warming spices! Yum!

Equipment

  • 1 Large Saute Pan

Ingredients

  • ½ Medium Onion, diced
  • ½ Medium Bell Pepper, red, diced
  • ½ Medium Bell Pepper, green, diced
  • 1 Medium Carrot, diced
  • 3-4 Cloves Garlic, minced
  • 1 -14 oz can Tomatoes, crushed or diced
  • 2 TBSP Tamari Sauce, low sodium and gluten free
  • 2 tsp Oregano, dried
  • 1 tsp Thyme, dried
  • 1 tsp Garlic, granulated
  • 1 tsp Onion, granulated
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1/4-1/8 tsp Black Pepper, ground
  • 1/8-1/4 tsp Cayenne Pepper, (optional)
  • 1 -14 oz can Chickpeas, rinsed and drained
  • 1 -14 oz can Red Kidney Beans, rinsed and drained

Serving Suggestions

  • Brown Rice
  • Parsley, chopped

Instructions

  • Heat the saute pan over medium-high heat. When the pan is hot enough, add the onion, bell peppers and carrots to the pan. Saute, moving the vegetables around often for about 10 minutes, or until the vegetables are softened.
  • Add the diced or crushed tomatoes and continue cooking for about 5 minutes.
  • Add the spices (oregano, thyme, granulated garlic and onion, cumin, paprika, black pepper and cayenne pepper) and tamari sauce. Stir often to prevent burning. Cook for about 5 more minutes.
  • Add the chickpeas and red kidney beans. Cook for a few more minutes and continue stirring.
  • Serve and Enjoy!
