Lemon & Dill Quinoa Salad

The flavors in this salad are very light and full of summer vibes! This salad can be made in less than 30 minutes and can be used as a side salad, a green salad topper or as the main meal! This salad can be made a day ahead, which will allow the flavors to develop. Delicious!

  • 1 Large Bowl

Ingredients

Salad Ingredients

  • 1 C Quinoa (white, uncooked)
  • 1 -15 oz can Chickpeas, rinsed and drained
  • 1 large Cucumber, unseeded, diced
  • 1 large Bell Pepper, (color of your choice) diced
  • 2 medium Carrots, diced
  • 2-3 medium Green Onions, thinly sliced

Salad Dressing Ingredients

  • cup Lemon Juice, fresh squeezed (add more if you like)
  • 1 large Lemon Zest
  • 2 TBSP Dill, fresh chopped
  • 1/2-1 tsp Dijon Mustard (to taste)
  • 1/8-1/4 tsp Black Pepper (to taste)

Instructions

Salad Prep Instructions

  • Cook the quinoa in the medium saucepan according to package instructions. Fluff and set aside to cool when fully cooked.
  • While the quinoa is cooking, prep all of the vegetables, herbs and chickpeas. Add them to the bowl.

Salad Dressing Prep Instructions

  • Add the salad dressing ingredients to a small mixing bowl and whisk to combine.

Salad Assembly Instructions

  • When the quinoa is cooled, add it to the vegetables in the large bowl. Mix to combine.
  • Pour the salad dressing over the quinoa and vegetable mixture. Mix thoroughly and serve!
