Lentil BBQ Sandwich

This is a quick and easy sandwich filling that you can make with canned lentils in about 15 minutes! You can also use it as a topping for a sweet potato and serve with a side salad. Delicious!

Equipment

  • 1 Small Sautee Pan
  • 1 Medium Mixing Bowl

Ingredients

  • 1 -15oz can Lentils, rinsed and drained

BBQ Sauce Ingredients

  • ½ C Ketchup (I use low/no sodium and no sugar ketchup)
  • 1 TBSP Maple Syrup
  • ½ TBSP Distilled Vinegar
  • ½ TBSP Molasses
  • ½ TBSP Worcestershire Sauce (vegan)
  • ½ TBSP Tamari Sauce, (gluten free/low sodium)
  • 1 tsp Smoked Paprika
  • ½ tsp Yellow Mustard
  • ½ tsp Liquid Smoke

Serving Suggestions

  • 2 Medium Whole Grain Rolls
  • 2 Med Sweet Potatoes, baked

Instructions

  • To a small mixing bowl, add the BBQ sauce ingredients. Whisk until well combined.
  • Over medium heat, add the lentils to the sautee pan. Pour 3/4 of the sauce over the lentils and mix to combine. Heat until all the lentils are heated through.
  • If your lentils seem a bit dry, add more of the sauce. You can reserve some of the sauce to pour over the top of the lentils when you serve them too!
  • Once heated through, spoon the lentil mixture on a bun. Top with crunchy vinegar coleslaw for some crunch! Enjoy!

Serving Suggestion: Spoon Lentils over a baked sweet potato!

A sweet and tangy BBQ sauce mixed with canned lentils gives you a wholesome, healthy protein packed meal in about 15 minutes! Beans used as a protein are so much healthier and cheaper than meat!
