Mushroom Pecan Patties

Freezer friendly so double the recipe and freeze some for a quick meal later! Great texture and great flavor!

  • 1 Large Mixing bowl
  • food processor
  • 1 Large Baking Sheet
  • Parchment Paper or Silicone Baking Pad


  • 8 oz Mushrooms, sliced (I like cremini, but any mushroom will do)
  • 1-2 TBSP Water (for sauteeing mushrooms)
  • ¼ C Red Onion, diced
  • 2-3 cloves Garlic, minced
  • 1 -15 ox can Chickpeas, rinsed and drained
  • 3/4-1 C Pecans, small pieces
  • 1 ½ C Rolled Oats (Use GF oats if desired)
  • 2 TBSP Tomato Paste (Can sub Sugar and Salt Free KetchupP
  • 1 TBSP Nut Butter or Sun Butter


  • Preheat oven to 350 degrees.
  • Heat a large skillet over medium-high heat. When your pan is hot, add the mushrooms and saute for about 3-5 minutes or until the mushrooms soften.
  • Add the diced onion, and saute another 3-5 minute or until the onions are softened.
  • Add the garlic and saute another 1-2 minutes, being careful not to let the garlic burn.
  • Remove from heat and add to your food processor. Pulse once or twice.
  • Also add the rolled oats, pecans and chickpeas.
  • Process by pulsing a few times until all of the ingredients become small chunks, but not a paste!
  • In your large mixing bowl, add the tomato paste and nut butter. Mix to combine.
  • Add the mixture from the food processor to the bowl. Mix well. (Your hands are some of the best tools you have, so feel free to get in there and mix it up!)
  • Form the mixture into six patties and place them on a parchment lined baking sheet.
  • Bake 7 minutes on one side, flip and bake an additional 7-8 minutes.
  • Serve and enjoy!


***Patties keep in an airtight container in the refrigerator for about 5 days.
***Freezer friendly too! Cool patties after baking on the baking sheet. Freeze on baking sheet for 2 hours. Transfer to freezer bag or airtight container. Freeze well for about 3-4 months.
***Reheating instructions for the microwave: Cover with a damp paper towel as reheating can cause them to become a bit dry. No worries! Just add a sauce or some juicy toppings (like tomatoes or salsa) to prevent the dry feeling in the mouth!

A hearty burger or patty that will stand up to grilling if grilled on a pan! Double the recipe and keep an extra batch in the freezer for a quick dinnoer or lunch!
