Ingredients

No Crab Cakes

  • 1 -15 oz can Chickpeas, rinsed and drained
  • 1 -15 oz can Hearts of Palm, rinsed and drained
  • ½ Med Sweet Onion, fine diced
  • 3 TBSP Vegan Mayo (see tofu mayo recipe)
  • 1 tsp Dijon Mustard
  • 1 TBSP Old Bay Seasoning, salt free preferred (see Old Bay Seasoning recipe)
  • ¼ tsp Black Pepper, ground
  • ¾ C Bread Crumbs (Can use GF, Panko crumbs work well)
  • ¼ C Dill, chopped (Can sub fresh Parsley)

Lemon Aioli

  • ½ C Vegan Mayo (see tofu mayo recipe)
  • 2 TBSP Lemon Juice, fresh squeezed
  • 1-2 cloves Garlic, minced (optional)
  • Black Pepper to taste

Instructions

No Crab Patties

  • To a food processor, add the chickpeas and hearts of palm. Pulse until the ingredients are just broken down, just a few pulses.
  • Transfer the mixture to a large bowl. Set the bowl aside.
  • Heat a medium saute pan over medium heat. Add diced onions and saute until translucent, about 3-4 minutes. If your onions begin to stick, add 1 TBSP of water or broth to release the onions from the pan.
  • Add the onions, vegan mayo, dijon mustard, Old Bay Seasoning, breadcrumbs, dill or parsley and black pepper to the chick pea and hearts of palm mixture. Mix using a spatula until well combined.
  • Form 8 patties.
  • Heat a medium saute pan over medium heat. Add 4 no crab patties. Fry the patties for about 4-5 minutes on each side, until they are golden brown. (Color=Flavor!)
  • Remove when finished and repeat with the last 4 patties.

Lemon Aioli

  • While your patties are sauteeing, begin to make the Lemon Aioli.
  • To a small mixing bowl, add the vegan mayo, lemon juice, garlic and pepper.
  • Whisk until well combined.
  • Serve the Lemon Aioli along with the No Crab Cakes and enjoy!

Notes

***No Crab Cakes can be kept in an airtight container in the refrigerator for up to 5 days. Reheat in a small sautee pan over medium heat until heated through.
***Air Fry- 400 degrees for 20-25 minutes, flip 1/2 way through
***Bake- Place on a parchment lined baking sheet and bake at 400 degrees for about 20 minutes. Flip the patties 1/2 way through. The patties may not brown as well using this method.

This recipe is a wonderful light lunch item served with a side salad. You could also serve it as a sandwich on a bun or lettuce leaf. The flavors are delicious!
