No Egg Nog

If you grew up drinking eggnog for holiday celebrations and no longer eat eggs, this is the drink for you! All the flavors and creaminess of the traditional drink, but oh so much better for you! It is refined sugar free using white sweet potatoes and maple syrup only for it's sweetness! You'll want to make this drink year round! This drink can be made lower fat and nut free depending on whether you use a nut based milk or water.

Equipment

  • High Speed Blender

Ingredients

  • 2 C Plant Based Milk (Use nut free version or for lower fat content use water)
  • 2 TBSP Hemp Hearts (optional if using plant milk. If using water, they will add a creaminess to the drink)
  • C White Sweet Potato, cooked and mashed (You can add another TBSP or two if you like) (You must use WHITE sweet potatoes as they contain the highest degree of sweetness)
  • 3-4 TBSP Maple Syrup
  • ¾ tsp Vanilla
  • ¼ tsp Nutmeg, ground
  • ¼ tsp Cinnamon, ground
  • tsp Ginger, ground

Instructions

  • Add all of the ingredients and only 3 TBSP of maple Syrup to start with to the high speed blender.
  • Blend until smooth.
  • Taste the mixture to determine if it is the sweet enough for you. If not, add the additional 1 TBSP of maple syrup and blend again until smooth.
  • Keep in mind that if you chill this drink, the sweetness may become a bil less sweet when you serve it, so be sure to taste it before serving and adjust it as needed.
  • Serve with a sprinkle of nutmeg if you like!
  • Store in an airtight container for up to 4 days. It makes a great coffee creamer too!
