Peanut Butter Oatmeal Bars- No Bake

These peanut butter oatmeal bars have only 4 ingredients! Quick and easy to make and there are many different options for add ins to satisfy your family's preferences!

Equipment

  • 1 Medium Mixing Bowl
  • 1 Medium Saucepan
  • 8 X 8 pan
  • Parchment Paper

Ingredients

  • 3 Cups Oatmeal flakes, traditional-not instant (Gluten Free if needed)
  • 1 Cup Peanut Butter
  • ½ Cup Maple Syrup
  • 1 tsp Vanilla

Optional Add In Ingredients

  • ¼ Cup Dairy free chocolate chips
  • ¼ Cup Raisins
  • ¼ Cup Craisins
  • ¼ Cup Nuts of your choice
  • 1 tsp Cinnamon

Instructions

  • Line the 8 x 8 pan with parchment paper.
  • Add the oatmeal to the medium mixing bowl and set aside.
  • To the medium saucepan add the peanut butter, maple syrup and vanilla. Place over medium to medium-low heat. Stir or whisk until well combined and all of the peanut butter is melted.
  • Remove the mixture from the heat. Pour carefully over the oatmeal.
  • Stir to combine until all of the oatmeal is coated with the peanut butter mixture.
  • Pour the mixture into the 8 X 8 baking pan and press the mixture so that is evenly distributed throughout the pan.
  • If you like a thicker bar-see notes below.
  • Freeze for a minimum of 30 minutes. Remove from the freezer and cut into 16 bars.
  • Store in an airtight container in the refrigerator for up to 1 week.

***For a thicker bar, make 1+ 1/2 recipe!
