Plant Based Nutter Butter Cookies

Better than the real thing and better for your health! Better make a double batch, they'll go quickly!

Equipment

  • 1 Large Mixing bowl
  • 1 Small Mixing Bowl
  • 1 Baking Sheet
  • Parchment Paper

Ingredients

Cookie Ingredients

  • 1 C Peanut Butter, creamy
  • C Maple Syrup
  • 2 tsp Vanilla
  • 1 ⅓ C Almond Flour
  • 1 tsp Baking Powder

Filling Ingredients

  • ¼ C Peanut Butter, creamy
  • 1-2 TBSP Maple Syrup

Instructions

Cookie Instructions

  • Prep your baking sheet with parchment paper. Preheat oven to 350 degrees.
  • In a large mixing bowl, combine peanut butter, maple syrup and vanilla. Mix well.
  • Add the almond flour and baking powder. Fold to incorporate.
  • Roll dough into 1 inch balls. Place two of the cookie balls on a baking sheet, being sure that they touch.
  • Using a fork, gently press down on each cookie ball. Then turn your fork 90 degrees and press each cookie again. When you're done, the cookies should have a criss-cross pattern.
  • Repeat until all of your dough has been used. You will need two cookies to make a sandwich.
  • Bake for 12-15 minutes. The cookies should be slightly golden brown around the edges.
  • Once the cookies are baked, cool for about 10 minutes.

Filling Instuctions

  • To a small mixing bowl, add the filling ingredients (peanut butter and maple syrup). Mix until well combined.
  • When the cookies are cool, spread the filling on one side of each cookie. Take the other side of the cookie and place on the cookie with filling. Gently press so that they stick together.

Notes

***The cookies will keep for 3-4 days in an airtight container in the refrigerator and for up to 3 months in the freezer!
***You can make these as individual round cookies, they don’t have to resemble nutter butter cookies
***These make great plain peanut butter cookies without the filling!
