Pumpkin Chickpea Curry

This dish has a sweet heat! The addition of pumpkin pie spice provides a new taste sensation in the world of curries! Simple and quick especially if you use frozen brown rice to serve with it! So good and satisfying!

Equipment

  • Large Saute Pan

Ingredients

  • 2 -15 oz cans Chickpeas, rinsed and drained
  • 1 Med Onion, diced
  • 2-3 Cloves Garlic, minced
  • 1-2 Inch Ginger, fresh and grated
  • 1 ½ C Pumpkin puree
  • 3 TBSP Tomato paste
  • 1 can Coconut Milk
  • 2-3 TBSP Maple Syrup, adjust to taste
  • 1 TBSP Garam Masala
  • 1 TBSP Yellow Curry
  • 1 tsp Turmeric
  • 1-2 tsp Pumpkin Pie Spice
  • ½ tsp Black Pepper

Optional Garnishes

  • ¼ C Pepitas, raw (Pumpkin Seeds)
  • ¼ C Pomegranate Pareils
  • ¼ C Pomegranate Pareils
  • ¼ C Pomegranate Pareils
  • 3 TBSP Cilantro, chopped
  • Lime Wedges

Instructions

  • To the large saute pan over medium heat, add the diced onions and saute for a few minutes or until the onions are softened.
  • Add the garlic, ginger, garam masala, yellow curry, turmeric, pumpkin pie spice and black pepper. Saute for about 1-2 minutes, continually moving the mixture around in the pan to prevent burning.
  • Add the tomato paste and pumpkin puree, cook about 1-2 minutes more.
  • Add the coconut milk, maple syrup and chickpeas. Stir to combine and continue heating until the mixture is warmed through. about 10-15 minutes.
  • Serve over warm brown rice and garnish as you like! Yum!
