Pumpkin Seed Alfredo

What?!?!?! Yes! You can use pumpkin seeds to create delicious sauces! For anyone who has nut allergies (Use a nut free plant based milk) or if you don't want all of the fat found in nuts, this is the sauce for you! So easy and ready in about the time it takes to boil your noodles! A great alternative to vegetable only or nut sauces!

  • High Speed Blender
  • small saucepan


  • ½ Cup Pumpkin Seeds, roasted & unsalted
  • 2 Cloves Garlic, fresh peeled
  • 1 Large Shallot, peeled and chopped (can substitute 1/2 c onions, chopped
  • 1 ½ Cups Plant Based Milk (use nut free or soy free as needed)
  • 2 tsp Lemon Juice, fresh squeezed
  • ¼ tsp Nutmeg, fresh grated or ground
  • ¼ tsp Black Pepper


  • Add all of the ingredients to the high speed blender.
  • Process on high until the sauce has become creamy. Stop once or twice to scrape down the sides as needed.
  • Once the sauce is creamy, transfer it to the small sauce pan. Place over medium heat, stirring constantly until the sauce thickens.
  • Once the sauce has reached the desired thickness, pour over pasta or baked potato and serve!
