Roasted Sweet Potato Medallions with Maple Pecan Glaze

A new twist on the traditional sweet potato dish for the holidays! Oil free and refined sugar free roasted sweet potatoes topped with warm maple syrup and pecans! These sweet potatoes would also make a great addition to your breakfasts or brunches! Great any time of year!

Equipment

  • Large Baking Sheet
  • Silicone Baking Mat or Parchment Paper
  • small saucepan

Ingredients

  • 3 Large Sweet Potatoes (Peel and cut into 1/2-1 inch thick discs)
  • ¾ C Maple Syrup
  • 1 tsp Vanilla
  • ¾ C Pecans, coarsely chopped

Instructions

  • Preheat your oven to 425 °F
  • Peel the sweet potatoes and then cut them into about 1/2-1 inch round discs.
  • Place them in a single layer on the baking sheet. Place the baking sheet on the middle rack and roast the potatoes for about 15-20 minutes. You can spritz them with water or vegetable broth (not too much) if you like.
  • Turn each disc over and return to the oven for about another 15-20 minutes. Check the bottoms of the discs as this is where the roasted color develops.
  • While the potatoes are roasting, add the maple syrup and vanilla to the small saucepan. Over medium heat, bring to a simmer. Once simmering, add the pecans. Bring back to a simmer and then remove the sauce from the heat.
  • Once the potatoes are done, plate them and pour the sauce over the potatoes! If you feel there is too much sauce, serve a little on the side! (It's great over pumpkin pancakes or waffles if you have leftovers!)
  • Enjoy!
