Spinach and Sweet Potato Salad

This salad has a great fall vibe! The wonderful flavor of apples, sweet potatoes, spinach, cranberries, pumpkin seeds and pecans. You can change out the greens and use your favorite! This can also be made nut free and it pairs well with the maple mustard dressing.

Equipment

  • Large Salad Bowl

Ingredients

  • 1 -5 oz pkg Spinach, fresh and chopped
  • 2 med Sweet Potatoes, baked, cooled and cubed
  • 1-2 med Apples, cored and diced (mix in lemon juice and drain)
  • 2 TBSP Lemon Juice
  • ½ med Red Onion, diced
  • ¼ C Craisins
  • ¼ C Pepitas, raw and unsalted
  • ¼ C Pecans, chopped (omit to make nut free and lower fat)

Instructions

  • Add all of the ingredients to a large salad bowl and mix well to combine. (Hint: I like to layer the salad–>greens and then toppings and repeat. This way you don't need to mix your salad prior to serving and everyone gets some of each ingredient in their serving!)
  • Serve with maple mustard salad dressing and enjoy!

Notes

***Optional Add ins:
     -1 can lentils, (or other beans) rinsed and drained
     -Mixed greens or kale in place of spinach
