Tempeh Reuben Sandwiches

What a great sandwich to celebrate St. Patrick's Day or just because! The tempeh is a great sandwich filling and has that "pickled" flavor reminiscent of the original sandwich!

Ingredients

Tempeh Marinade

  • 1 -8 0z pkg Tempeh
  • ½ Cup Vegetable Broth (Can substitute water)
  • 1 TBSP Balsamic Vinegar
  • 1 TBSP Vegan Worcestershire sauce
  • 1 TBSP Pickling Spice
  • 1 tsp Liquid Smoke
  • 1 tsp Garlic, granulated
  • 1 tsp Onion powder
  • 1 tsp Smoked Paprika

Sandwich Ingredients

  • 8 Slices Rye Bread of choice, toasted
  • ¼ Cup Thousand Island Dressing (recipe under dressings)
  • ½ Cup Sauerkraut

Instructions

Tempeh Preparation Instructions

  • Cut the tempeh in 1/2 lengthwise. Cut each half in half again across the width. Turn each piece on their side a cut in half lengthwise again. You should have 8 pieces when you're finished.
  • In the bottom of a shallow pan, mix all of the marinade ingredients until well combined. Lay the tempeh on top of the marinade. Turn each piece over to coat both sides.
  • Marinade for at least 1/2 hour or your can marinade it overnight.

Tempeh Cooking Instructions

  • Heat a large saute pan over medium-high heat. When the pan is hot, add all of the tempeh pieces. Allow to heat without moving for about 2-3 minutes and check to make sure they don't burn. You can brush the tempeh with the extra marinade sauce before turning them over. Once the tempeh has a bit of a crust, turn each piece over and repeat cooking process. Marinade the second side if you wish.

Sandwich Assembly

  • Using two slices of toast per sandwich, spread each side with thousand island dressing. Layer the tempeh and then sauerkraut and place the top piece of toast on the sandwich.
  • Serve and enjoy!
