Thousand Island Dressing

This dressing is great for your St. Patrick's Day reuben sandwich, over a salad, as a potato topper or a dip for baked potato slices!

Equipment

  • High Speed Blender

Ingredients

  • 1 Cup Cashews, soaked and drained
  • 1 Cup Plant Milk, unsweetened
  • ¼ Cup Ketchup
  • ¼ Cup White Vinegar
  • 1 TBSP Lemon Juice, fresh squeezed
  • ¾ tsp Paprika
  • ¼ Cup Sweet Pickle Relish (see notes if using dill relish)
  • ¼ Cup Red Onion, fine dice

Optional Ingredient

  • 1 tsp Hot Sauce

Instructions

  • Add the cashews, milk, ketchup, vinegar, lemon juice and paprika to the blender. Process on high for several minutes. Scrape down the sides and blend again until the mixture is smooth.
  • Add the relish and onions. Pulse until all ingredients are well combined.
  • Serve and Enjoy! Refrigerate in an airtight container for about 1 week.

Notes

*** If using dill relish, add 1-2 TBSP Maple syrup to give the dressing the sweet flavor.
