Thyme Tofu Ricotta
This is a very versatile nut free ricotta recipe as you can change up the herbs to complement whatever recipe you happen to be making!

Equipment
- Small Mixing Bowl
- Clean Dish Towel
Ingredients
- ½ Block Tofu, drained (Firm or Extra Firm Tofu)
- 3 TBSP Nutritional Yeast
- 2 TBSP Parsley, fresh, chopped (sub 2 tsp if using dried Parsley)
- 2 tsp Apple Cider Vinegar
- 2 tsp Thyme, fresh, chopped (sub 1 tsp if using dried Thyme)
- â…› tsp Black Pepper
Instructions
- Drain the tofu and place it in a clean dishtowel. Twist the dishtowel so that most of the liquid is removed.
- When the tofu is squeezed and dry, crumble it into the small mixing bowl.
- Add the remaining ingredients, (nutritional yeast, parsley, apple cider vinegar, thyme and black pepper). Mix well to incorporate all of the ingredients.
- Your thyme tofu ricotta is ready to use!
