Tofu Banh Mi

This sandwich is delicious with a sweet sour spicy profile! The marinated tofu and the pickled vegetables make this a perfect lunch item anytime! So Good and Good For You!

Equipment

  • Tofu press (optional)
  • 1 Large Saute Pan
  • 2 Flat baking dishes
  • 1 Small Mixing Bowl

Ingredients

  • 1 block Tofu, extra firm 14 oz cut into 8 pieces (drained and pressed)

Marinade Ingredients

  • 6 Tbsp Tamari (gluten free, low sodium) (for salt-free homemade, see notes)
  • 2 TBSP Lime Juice
  • 2-3 TBSP Maple Syrup
  • 2 TBSP Hoisin Sauce (see recipe-Hoisin Sauce)
  • 1 ½ tsp Garlic, granulated
  • 1 ½ tsp Onion Powder, granulated
  • 2 tsp Siracha or Garlic Chili Sauce (optional)

Pickled Veggie Ingredients

  • 1 Large Carrot, peeled and thinly sliced
  • ½ Large Seedless Cucumber or 2 Regular Persian Cucumbers, thinly sliced
  • 1 Medium Daikon Radish (optional), thinly sliced
  • 1 Small Jalapeno, sliced into rounds
  • C Rice Wine Vinegar
  • 4 TBSP Maple Syrup

Mayo

  • Vegan Mayo (see tofu mayo recipe)
  • Siracha or Garlic Chili Paste (mix into vegan mayo if you like)

Sandwich Garnishes

  • Cilantro

Hoisin Sauce

  • 5 TBSP Tamari-low sodium, gluten free
  • 2 TBSP Peanut Butter (Natural, low sodium)
  • 2-3 TBSP Maple Syrup
  • 1 TBSP Molasses
  • 1 tsp Garlic, granulated
  • 1 tsp Onion Powder
  • 1/4-1/2 tsp Chinese Five Spice
  • 1/8-1/4 tsp Black Pepper

Instructions

Drain and Press Tofu

  • Once drained and pressed, cut the block of tofu in 1/2 lengthwise and then cut each 1/2 into 4 pieces. You should have a total of 8 pieces, 2 for each sandwich.
  • Place the tofu in a flat baking dish.

Hoisin Sauce Instructions

  • Add all ingredients to a small bowl. Whisk to combine.
  • Store in an airtight container in the refrigerator for up to 7 days. (This is a great wrap or salad sauce as well!)

Marinade Instructions

  • To a small mixing bowl, add all of the marinade ingredients and whisk until well combined. Taste and adjust seasonings if needed.
    ***If using the hoisin sauce from this recipe, make the hoisin sauce prior to making the marinade. Simply combine all of the ingredients in a bowl, and use the recommended amount in the marinade. Refrigerate the remainder for up to a week.
  • Pour the marinade over the tofu and then flip the tofu to coat the other side. Cover and refrigerate for about an hour to allow the tofu to absorb the flavors of the marinade.

Pickled Vegetable Instructions

  • To a small mixing bowl, add the rice wine vinegar and maple syrup. Whisk to combine. Pour over the prepared vegetables and toss to coat all of the vegetables with the pickling juice. Cover and refrigerate for a minimum of an hour.
  • Place all of the vegetables you plan to pickle in a flat baking dish.

Cooking Instructions for the Tofu

  • When your tofu is finished being marinaded, place a large saute pan over medium heat and allow it to warm up.
  • Once your saute pan is warm, add the tofu slices. Allow them to heat without moving for several minutes, then check them for crispness. If they are not quite crispy enough for you, allow them to continue sauteing in the pan until they reach the crispness you desire. This can take up to 5 minutes. Flip them and follow the same process on the second side. If you wish, brush some of the remaining marinade on the tofu as you saute it.

Sandwich Assembly

  • Spread the vegan mayonnaise on the bun. (with or without siracha).
  • Layer: Tofu, pickled vegetables and cilantro on the sandwich and serve.

Serving Option

  • If you prefer not to eat bread, use a romaine lettuce leaf as your sandwich bun!

Notes

***Hint: Save the leftover pickling juice and add some sliced red onion to use on sandwiches, wraps or even salads!
