Tofu “Roni” (Tofu Pepperoni)

Wow! The spices mixed with tofu really taste like pepperoni! However, this is significantly less processed than the traditional pepperoni and plant based! You can easily adjust the seasonings so that you have a "HOT" pepperoni or a more mild flavored pepperoni.

Equipment

  • food processor
  • Large Baking Sheet
  • Parchment Paper or an offset spatula (to spread the mixture on the sheet pan)
  • Silicone Baking Sheet or Parchment Paper
  • Small round cookie cutter or a small glass

Ingredients

  • 1 -14 oz pkg Tofu, extra firm (drained and pressed)
  • 2-3 tsp Coconut sugar (adjust for sweetness)
  • 2 tsp Ground Mustard
  • 2 tsp Smoked Paprika
  • 2 tsp Garlic, granulated
  • 1-2 tsp Crushed Red Pepper (optional) (adjust to taste)
  • 1-1 ½ tsp Ground black pepper (adjust to preferred taste)
  • 1-2 tsp Fennel, ground or crushed
  • ¼ tsp Ground Anise
  • 1 tsp Liquid Smoke (adjust to taste or omit)

Instructions

  • Preheat oven 400 °F
  • Drain and press tofu for 15 minutes. Preheat oven to 400 degrees.
  • When the tofu is finished draining and being pressed, cut it into cubes and place it into the food processor.
  • Add the remaining ingredients to the food processor (coconut sugar, ground mustard, smoked paprika, garlic, crushed red pepper, black pepper, fennel, anise and liquid smoke.
  • Pulse several times until the mixture starts to form a ball. scrape down the sides.
  • Taste and adjust the seasonings. Repeat until you have achieved the desired sweetness (coconut sugar), heat (red pepper) and smokiness (smoked paprika and liquid smoke).
  • Transfer the mixture to the lined baking pan. Spread the mixture to about 1/8 inch thickness using an offset spatula. If you don't have a spatula, cover the mixture with parchment paper or plastic wrap and use your hands to press the mixture and spread it on the pan.
  • Place in the oven on the middle rack and bake for about 25 minutes or until they begin to brown. The mixture should be slightly dried out.
  • Remove the baking pan from the oven and place on a flat surface.
  • Using a small round cookie cutter or a small glass, press into the mixture to cut "pepperoni" shapes. (I used a shot glass to cut the pepperoni shapes.). Work quickly as the mixture dries quickly.
  • The "pepperoni" are ready to use as a topping at this point. However, they should bake an additional 10-15 minutes or until your crust is finished baking.
  • If you don't use the slices right away, cool and store in an airtight container for up to 4 days.

***Store refrigerated in an airtight container for 4 days or freeze for up to one month!
