Walnut Meat Balls

These meatballs taste delicious! Pair them with the marinara sauce recipe and you have a quick and easy dinner! To make them gluten free, use 2 slices of gluten free bread! Who doesn't like spaghetti and meatballs?! Make a double batch, this recipe is freezer friendly!

Equipment

  • food processor
  • Large Baking Sheet
  • Silicone baking pad or parchment paper

Ingredients

  • 2 C Walnuts
  • 2 Slices of bread (Do not use dry bread!)
  • 1 Handful Italian Parsley, fresh
  • 2 TBSP Nutritional Yeast
  • 1 tsp Garlic, granulated
  • 1-2 Drops Liquid Smoke (optional)
  • ¼ C Water

Instructions

  • Preheat oven to 350 °F
  • Add the walnuts and bread to the food processor. Pulse to process until the mixture is broken down into small pieces.
  • Add the nutritional yeast, garlic, parsley and liquid smoke. Process until well incorporated.
  • While processing the mixture, slowly add the water and process until the mixture has the appearance of ground meat and sticks together.
  • Scoop out about 2 TBSP of the mixture. (I use a small cookie dough scoop). Squeeze the dough in your hand to assure that it sticks together. Carefully form a ball and place on a lined baking sheet. Repeat until all of the mixture has been made into balls.
  • Place the baking pan on the middle rack of the oven. Bake for 15 minutes. Turn the balls carefully and then return to the oven and bake for 15 more minutes.
  • Serve with marinara sauce. Refrigerate in an air tight container for about three to four days.

Notes

***To freeze, cool completely. Place in an airtight container or freezer bag and freeze for up to 2 months.
