White Bean, Lemon and Mint Salad

Lemon and mint are surprising complements to white beans in this salad! If you are looking to eat more beans, this salad is for you! Not only is it a great side salad, it is fantastic as a green salad topper and you don't even need salad dressing!

Equipment

  • 1 Large Mixing bowl

Ingredients

  • 2 -14 oz cans White Beans, rinsed and drained (Cannellini, Great Northern)
  • 1 Pint Grape Tomatoes, sliced in 1/2
  • 1 Med Shallot, thinly sliced
  • ΒΌ Cup Mint (fresh, chopped)
  • 3 TBSP Lemon Juice, fresh squeezed
  • 1 TBSP White Wine Vinegar
  • 1 TBSP Maple Syrup
  • 1/8-1/4 tsp White Pepper

Optional Add Ins

  • 1/2-1 Med Seedless Cucumber, quartered
  • 1 Med Avocado, seeded and cubed

Instructions

  • To a small measuring cup, add the lemon juice, white wine vinegar and maple syrup. Stir to combine.
  • To the large mixing bowl, add the beans, tomatoes, mint, and white pepper. Mix to combine.
  • Pout the liquid over the bean mixture and mix well. Refrigerate until ready to serve.
