Zucchini Pizza Slices with Tofuroni
Do you have a plethora of zucchini? This is a great gluten free way to serve pizza! Kids love to build their own pizzas and are more likely to eat it if they make their own! Use whatever toppings you like, but the tofuroni is an awesome sausage substitute to use if you like a little spice on your pizza!

Equipment
- Large Baking Sheet
- Silicone Baking Mat or Parchment Paper
Ingredients
Basic Zucchini Pizzas
- Zucchini, sliced about 1/2 inch thick
- 1 C Pizza Sauce
- Tofuroni slices
- Cashew Mozzarella
Optional Toppings
- Hemp Parmesan (optional)
- Mushrooms, Sliced
- Onions, diced
- Tomatoes, fresh, sliced
- Black or Green Olives, chopped
Instructions
- Preheat oven to 400 °F
- Slice the zucchini about ½ inch thick. Place on the baking sheet.
- Spread 1-2 TBSP of pizza sauce on each slice.
- Add tofuroni slices or any other toppings you choose.
- Top with Cashew Mozzarella.
- Bake at 400 °F for 15 minutes or until the cashew mozzarella turns slightly brown. If it doesn't turn brown, you can put the baking sheet under the broiler on low until the desired color is achieved. (Watch it closely so that it doesn't burn!)
- Serve and enjoy!
